redundancy solution

I have a Sun Enterprise 250 Server that has 3- 18 gig disks and a gig of
memory. The machine will be running Solaris8, this is a fresh install.
What I am trying to accomplish here is:
If a disk goes down due to hardware failure, I can take a blank disk (with
the same specs) and plug it into the old disks place with no loss of
information.

Any suggestions for this solution? Should I do mirroring and leave the third
as a spare? I would like to get the most bang for the buck here. I would
like a solution that gives me the most disk space, while accomplishing the
above tasks.

With the solutions, how should I partition the disk upon install.
Do I need to leave unpartitioned space to use later?
