mounted vs. external vs. internal

Quick question and apologies beforehand if I seems a bit strange or off
base. Currently I acquired some extra hd's from a friend who chucked
them for a nice sized raid. I would like to install them on one of my
personal machines but 1) I don't want to take down a live machine without
having an extra machine to back it up (personal machine with 60+ domains)
2) I thought about mounting it via another machine but am unsure of the
ramifications of doing so.

Has anyone ever used this sort of set up where the actual data is being
read and written via a mount to a live http request? I figured as long as
the connection is fast enough, and the drives are fast enough, I should
(in theory) not have a problem.

Another option would be to encase them and mount them that way, but I
would like to know some of the methods others have used. Normally workwise
I don't mind taking apart machines, however this one particular machine is
not necessarily backed up. I have a dupe running on a personal alpha
server, but the entire setup is different.
