Fistly sorry about the very over-due summary.

Thanks to Mike Keighley for help on this one.

Original Question:
I want to switch off my sendmail banner. Basically when I telnet onto my
mail server on port 25 I do not want :
220 mail.server.mydomain.com ESMTP Sendmail 8.9.3 (PHNE_18546)/8.8.6; Thu,

Answer:
This is controlled by the following option in /etc/mail/sendmail.cf:

O SmtpGreetingMessage=$j Sendmail $v/$Z; $b

"220" is part of the SMTP protocol and cannot be changed.
mail.server.mydomain.com is generated from $j, is also specified in the
protocol (RFC821) and ought not to be changed.
The rest is optional.

Then Mike went on further to explain:

Removing the $v/$Z options from:
O SmtpGreetingMessage=$j Sendmail $v/$Z; $b
will remove the Patch information and Sendmail version, which is acceptable
standard-wise.
