Please excuse my poorly worded original question.
New question:
After applying the ML10 updates but 'not committing' them, which of the
following menus would I use to:
1) Go back to the previous version of filesets, then,
2) Delete the ML10 filesets?
Here is the Software Maintenance and Utilities SMIT menu (fastpath:
maintain_software):
Software Maintenance and Utilities
Move cursor to desired item and press Enter.
Commit Applied Software Updates (Remove Saved Files)
Reject Applied Software Updates (Use Previous Version)
Remove Installed Software
To answer my own questions, I think I would: 'Reject Applied.....', then
'Remove Installed ..........'

As others have said, just apply the updates: don't commit them.
Note that this will use a bit more disk space than committing them straight
away.
I would recommend that you commit all other filesets before you do this;
it'll make things simpler later.
Don't forget to commit the ML10 update eventually!
