v5 install with serial output

We are doing a V5 install.
We have a gui console but prefer the installation to go through the serial
port so we can capture the output.
How do we force this ?
We have set the console option to serial but the install continues to use
the gui interface. Even using restart nogui sends the installation to the
cosole, not the serial port.
