Unbelievable! Literally less than 1 minute after posting my message I had a
response! Again, this listserv amazes me!
Thanks to everyone who replied so quickly: Lars Hecking (who replied under
the one minute mark!), Rich Teer, Christopher Barnard, Jay Lessert, Ryan

Quite simply, all I needed to do was change permissions on both /etc and
/etc/mail. I was focused on the sendmail.cf part of the error, and not
looking at the obvious complaining about the group writable directories.
I ran the command:
chmod og-w /etc /etc/mail
and everything is working well.
