Date Format Change from IST to GMT automatically

Hi Gurus,
               I have a problem related to System date.I have a Sun Blade 100
which is cofigured as an NTP server. The NTP server is in GMT+5 format. Now
Customer had requested to change the formt to IST, Hence i did the
following:-

Edited /etc/TIMEZONE and made TZ=Asia/Calcutta ( for Permanent change)

As, i couldn't reboot the server at that time, I did
TZ=Asia/Calcutta
export TZ

after which the date showed me the time in IST format, but after some time(
around 4-5 hrs) it again changed to GMT. Do i have to reboot the server or is
this something to do with NTP Configuration.

I have no clue as to how this happened, Does anyone have??
