Disabling "r" services

Does anyone know how to log the system/users processes that are using
the following inetd services

telnet
rsh
rlogin
rexec
ftp

I'm trying to block all of those services (for security reasons of
course and replace them with ssh) but I can see that they were recently
accessed (ls -lu service_file). Is there a way to enable logging on
them then check the syslog facility to figure that out, I know that I
can do that with ftp (using -l option in the inetd.conf file) but did
not find the equivalent for the rest of the services listed above.
