I have been looking for something along the same lines. One tool that
I have found does let me see the spool: Hijetter on
http://www.phenoelit.de/fr/tools.html

Hijetter Can do some fun tricks as well as store items on printers
with out having them print. As a side project I have thought about
taking the source and modifying it see if I can have a copy of
everything that goes to a target printer copied to a pc. Just don't
have the time right now.

If you find some thing, can you let me/us know? I have a use to
convice a customer of some items...
