how to organize a pen-tester introduction course

hi to all,
with a university association, located in Italy,Pisa in a software ingeneer
course, we'd like to present a pen-tester introduction course.

2 hours of teory with service structure and algorithms
2 hours of practice with tool and attack-test

for a total of 30 lessons.

the idea is to follow this step:
find connection wire/unwire

enumerate host & service

service analys.

etc etc.

could you please let me know wich is,for you, the best focus for this
type of lessons?

same reference or link with other course like this?
