Thanks to those who replied my email: Jason Neil, Marc Ahrendt, Eef Hartman.
Looks like it's not possible to capture process before it became defunct, but Jason suggests to use a tool called tusc. I personally haven't tried it, but I have found the root cause of my problem.
About 200 users in the factory use a common login. When number of user processes reaches its limit (maxuprc), one of the application process generates a defunct process. Fortunately it's a dynamic kernel parameter (no system reboot required for change), so I just increased it, and problem solved.
