Thanks to everyone who replied. The consensus is that I should have no problem using a pc or older server to run dns. Most people thought RedHat would be just fine, many are doing exactly what I propose to do - running RedHat on a small system for a dns server. Several suggested I use FreeBSD for a DNS server outside the firewall as it has better security.
